So the other day, I heard my mum singing “Dorobucci ” and I was like OMG!!!. The thing is I am not really big on the whole jollof music because the lyrics don’t do it for me, but I will admit anytime Dorobucci comes up , I find myself dancing and I guess that’s what it’s all about, Feel Good Music.
So in honour of all things “doro”, we at Guava Kitchen have created a dish dedicated to this special movement…The Doro Burger – It is fresh, spicy, packed full of flavour and rich just like the personalities of the Mavins wrapped up in one.
Doro enjoy it!!! Lol.
Doro Burger
Serves 4
Ingredients
Bell Pepper Salad
- 1 red pepper, cut into strips
- 1 orange pepper, cut into strips
- 1 yellow pepper, cut into strips
- 3 tablespoons red wine vinegar or lemon juice
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1 tablespoon finely chopped parsley
- salt and black pepper to taste
Beef Patties
- 2 tablespoons sunflower/canola oil
- 1 red onion finely chopped
- 1 carrot finely chopped
- 2 cloves garlic finely chopped
- 1 red or green chilli finely chopped
- 1 teaspoon, fresh parsley, chopped
- 1 tablespoon barbecue sauce
- 1 egg
- 4 burger buns
- 4 cheddar cheese slices
Spicy Coriander Relish
- 6 green chilies
- 2 green peppers
- 4 spring onions
- 3 garlic cloves
- A handful of fresh coriander
- 2 tablespoons of groundnut oil
Plantain Tostones
- 1 fairly ripe plantain
- Oil for frying (canola or vegetable oil)
Burger Sauce
- 4 tablespoons mayonnaise
- 2 tablespoons barbecue sauce
Method
To make the salad
In a bowl, combine lemon juice or vinegar, parsley, sugar, garlic and extra virgin olive oil in a bowl and whisk to blend thoroughly.
Place peppers in a separate bowl and pour dressing over peppers and toss to coat. Add salt and pepper to taste. Cover and set aside until ready to use.
To make coriander relish
Roughly chop the garlic and fresh coriander. Put all ingredients into a processor except oil and stock cube. Do not blend till smooth; the mixture should still have some texture.
Heat oil in a pan, add chilli and coriander mixture and sauté for about 5 minutes, add stock cube and sauté for a further 5 minutes till mixture comes together. Set aside.
To make plantain Tostones
Heat oil in a frying pan to a medium-high heat, in the meantime prepare the plantains. Peel plantains and chop into 1 inch rounds. Fry 1 inch rounds for about 4 minutes (2 minutes on each side), remove from oil. Drain on paper towels.
Smash each piece until flattened. Fry on high heat for a second time until golden brown. Set aside.
(Tostones is a popular plantain dish eaten in Latin America.)
To make beef patties
Heat oil in a non-stick pan, add onion, carrot, garlic and chilli and sauté for 5 minutes.
Add barbecue sauce and cook for 2 minutes.
Crack an egg into a separate bowl and mix with a fork. This will help bind the burger mixture together Transfer onion mixture to a large bowl, add mince, parsley and beaten egg. Mix with your hands then shape into 4 evenly sized burgers.
Heat a non-stick frying pan till hot, add oil then cook the burgers for 5-6 minutes each side. Place sliced cheese on each burger, cover with a pan to melt the cheese.
To make burger sauce
Mix mayonnaise and barbecue sauce together.
To assemble burger
Slice burger bun into two and toast each under a grill or a grill plate. Spread burger sauce on both.
Place the bottom half of bun on a plate, add plantain, spread some of the coriander relish, followed by the beef patties with the melted cheese and top with the pepper salad. Cover with top half of bun. Enjoy!!!
